Fully Loaded Vegan Cheesy Baked Potato Soup



This Fully Loaded Vegan Cheesy Baked Potato Soup is a hearty and comforting dish that is great for cold days. It tastes great, is creamy, and is full of healthy ingredients. Adding nutritional yeast to mashed potatoes and spices gives it a cheesy taste without using dairy. On top of that, it has tasty vegan toppings that add extra texture and taste.

Ingredients:

  • 4 large potatoes, baked and mashed
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 cup nutritional yeast
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Toppings: chopped green onions, vegan bacon bits, vegan cheese shreds, vegan sour cream

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

To this mix, add chopped onion, carrot, celery, and garlic

It will take about 5 minutes of sauting until the vegetables are soft

Put cornstarch on top of the vegetables and stir to coat them

Slowly add the vegetable broth while stirring all the time to avoid lumps

Mix in nutritional yeast, smoked paprika, turmeric, salt, and pepper

Add mashed potatoes as well

Mix everything together well

Bring the soup to a simmer and stir it every now and then for 10 to 15 minutes, until it gets thick

Make the seasonings taste better

For a nice touch, serve it hot with vegan sour cream, vegan bacon bits, and vegan cheese shreds on top
