Cookie Butter Blondies



These cookie butter blondies are a delightful twist on traditional blondies, with the irresistible flavor of cookie butter and pockets of creamy white chocolate chips. They're easy to make and perfect for any occasion, whether it's a casual family treat or a special dessert for guests.

Ingredients:

  • 1/2 cup 1 stick unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cookie butter
  • 1/2 cup white chocolate chips

Instructions:

Start by heating the oven to 350F 175C

Set aside a 9x9-inch baking pan that has been greased

Melt the butter and mix it with the brown sugar in a bowl until the two are well mixed

Mix the vanilla extract and egg into the mixture and stir until it is smooth

Mix the flour, baking powder, baking soda, and salt together in a different bowl

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

The cookie butter and white chocolate chips should be evenly spread out in the batter after they are added

Spread the batter out evenly in the baking pan that has been prepared

In a hot oven, bake for 25 to 30 minutes, or until the edges are golden brown and a toothpick stuck in the middle comes out clean

Let the blondies cool all the way in the pan before cutting them into pieces and serving them

Salted Caramel Toffee Coconut Ice Cream



Indulge in the creamy richness of coconut milk infused with the sweetness of caramel and toffee, heightened with a touch of sea salt. This Salted Caramel Toffee Coconut Ice Cream is a delightful treat for any occasion.

Ingredients:

  • 2 cans 800ml coconut milk
  • 1 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped toffee or caramel candies
  • 1/2 teaspoon sea salt

Instructions:

In a saucepan, combine coconut milk and coconut sugar over medium heat, stirring until sugar is dissolved

Remove from heat and stir in vanilla extract

Let the mixture cool completely, then transfer to an ice cream maker and churn according to manufacturer's instructions

During the last few minutes of churning, add chopped toffee or caramel candies and sea salt

Transfer the ice cream to a container and freeze for at least 4 hours or until firm

Serve and enjoy!
