Ingredients:

  • 4 large potatoes, baked and mashed
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 cup nutritional yeast
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Toppings: chopped green onions, vegan bacon bits, vegan cheese shreds, vegan sour cream

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

To this mix, add chopped onion, carrot, celery, and garlic

It will take about 5 minutes of sauting until the vegetables are soft

Put cornstarch on top of the vegetables and stir to coat them

Slowly add the vegetable broth while stirring all the time to avoid lumps

Mix in nutritional yeast, smoked paprika, turmeric, salt, and pepper

Add mashed potatoes as well

Mix everything together well

Bring the soup to a simmer and stir it every now and then for 10 to 15 minutes, until it gets thick

Make the seasonings taste better

For a nice touch, serve it hot with vegan sour cream, vegan bacon bits, and vegan cheese shreds on top

Cracked Black Pepper Shrimp Alfredo Pasta

Ingredients:

  • 8 oz fettuccine pasta
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp cracked black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions:

Follow the directions on the package to cook the fettuccine until it is al dente

Remove the water and set it aside

Warm up the olive oil in a big pan over medium-low heat

For about one minute, until the garlic smells good, add the minced garlic

Put the shrimp in the pan and cook for about two to three minutes on each side, until they are pink and opaque

Take the shrimp out of the pan and set it aside

Put heavy cream and cracked black pepper in the same pan

Bring to a low boil, then turn down the heat

Add grated Parmesan cheese and mix it in until it melts and the sauce is smooth

Add salt to your liking

Toss the cooked fettuccine pasta in the Alfredo sauce after adding it to the pan

Put the cooked shrimp back in the pan and mix it with the pasta and sauce slowly until everything is hot

Serve hot with fresh parsley on top

Salted Caramel Toffee Coconut Ice Cream

Ingredients:

  • 2 cans 800ml coconut milk
  • 1 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped toffee or caramel candies
  • 1/2 teaspoon sea salt

Instructions:

In a saucepan, combine coconut milk and coconut sugar over medium heat, stirring until sugar is dissolved

Remove from heat and stir in vanilla extract

Let the mixture cool completely, then transfer to an ice cream maker and churn according to manufacturer's instructions

During the last few minutes of churning, add chopped toffee or caramel candies and sea salt

Transfer the ice cream to a container and freeze for at least 4 hours or until firm

Vegan Peanut Butter Cookies



These peanut butter cookies are vegan and taste great. They are also better for you than regular cookies. They are made with healthy things like peanut butter, maple syrup, and coconut flour, and they're a great way to satisfy your sweet tooth without feeling bad.

Ingredients:

  • 1 cup peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup coconut flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Vegan chocolate chips optional

Instructions:

Warm the oven up to 175F 350C

Put peanut butter, maple syrup, coconut flour, vanilla extract, baking powder, and salt in a bowl

Mix everything together well

You can add vegan chocolate chips if you want to

Put the dough balls on a baking sheet that has been lined with parchment paper

Press down gently on each ball with a fork to make a crisscross pattern

After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden

After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down
