Chicken Taco Soup

Chicken Taco Soup Recipe


1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) petite diced tomatoes
1 can (15 oz) sweet corn, drained
1 can (12.5 oz) chicken breast, drained & flaked or 1 cup chopped rotisserie chicken
1 can (10 oz) green enchilada sauce (use 1/2 if too spicy for young kids)
1 can (14 oz) low sodium chicken broth
1 package taco seasoning
1/2 t. cumin
1/2 t. chili powder (optional)
1/2 t. garlic powder


Combine all ingredients into a large soup pot and bring to a boil over medium-high heat. Once boiling reduce heat to low and let simmer for about 20-30 minutes. Stirring occasionally. Serve. Enjoy!
