Chili Mac Casserole

I found this recipe online and adapted it to my family's preference. The nice thing about this is you can change several ingredients for variety.

Chili Mac Casserole Recipe


1 lb. Ground beef
1 can Green Chilies
1 can Black Beans
1/2 medium Onion
1 can diced Tomatoes
1 can Tomato paste 
1 package Elbow macaroni
1/2 t. Pepper
1/2 t. Garlic Salt
1 t. Cumin
2 cups Mexican cheese blend (or any cheese you prefer)


1. Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, beans, tomato paste, chilies and seasonings. Drain macaroni; add beef mixture.

2. Transfer to a 13x9 inch baking dish coated with cooking spray. Cover and bake at 375 degrees for 20-25 minutes or until bubbly. Uncover, sprinkle with cheese. Bake 5-7 minutes longer or until cheese is melted.
