Zucchini Muffins

Zucchini Muffins Recipe


1 1/2 cup flour
3/4 cup sugar
1 t. cinnamon
1 t. baking soda
1/2 t. salt
1 lightly beaten egg
1/2 cup oil (I used coconut oil)
1/4 cup milk
1 t. lemon juice
1 t. vanilla
1 cup finely shredded zucchini


Preheat oven to 350 degrees. Grease muffin pan or use paper liners. 
In a large mixing bowl, stir dry ingredients. In a separate bowl, lightly beat egg, and add oil, milk, lemon juice, and vanilla. Pour into dry ingredients and combine thoroughly. Fold in shredded zucchini. Fill each muffin cup 2/3 full. Bake in preheated oven for 20-25 minutes or until inserted toothpick comes out clean.

Makes 12 muffins.
