Baked Pesto Chicken

This chicken recipe is healthy, simple to make, and full of flavor. I will definitely be making it again soon!

Baked Pesto Chicken Recipe


4 Boneless, Skinless Chicken Breasts
1/2 c. of Basil (fresh or store bought)
1/4 c. grated Parmesan Cheese
1/2 c. grated Mozzarella Cheese
Salt & Pepper (for seasoning)


Preheat the oven to 375 degrees. Cut each chicken breast lengthwise into 2-3 inch pieces.

Spray 9x12 baking dish with non-stick cooking spray or line with foil for easy clean up. 

Spread 1/4 cup pest sauce on the bottom of the baking dish. Place chicken strips over bottom layer of chicken. Season chicken breast with salt and pepper. Pour remaining 1/4 cup of pesto sauce over the seasoned chicken strips. 

Cover the baking dish with aluminum foil and bake chicken for 30 minutes. 

Remove foil and sprinkle cheese over the top of the chicken. Place in the oven uncovered for another 10-15 minutes or until cheese has melted and slightly browned.

Serve with rice, quinoa, or couscous to help soak up some of the pesto/chicken juices.
