Black Bean and Corn Salad

I recently tasted this recipe at a 4th of July party. 

This salad is so fresh and full of flavor that I had to learn how to make it!

Black Bean and Corn Salad Recipe

1/3 cup fresh lime juice
2 T. olive oil
1/8 t. ground cayenne pepper
2 (15 ounce) cans of black beans, rinsed and drained
1 1/2 cup frozen corn kernels
1 avocado- peeled pitted & diced 
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup fresh cilantro
garlic salt, to taste

  1. Place lime juice, olive oil, garlic salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
  2. In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.

Can be served with tortilla chips, on a bed of lettuce, or on its own.
