Red Velvet Pancakes

I first tried Red Velvet Pancakes when I was on a trip in Santa Monica, CA. We went to a food truck festival and the Buttermilk Truck (owned and operated by a pastry chef) was serving this delicious breakfast that tastes more like dessert.

For those of you that are not familiar with Red Velvet Pancakes it tastes more light and cake like than regular pancakes. These pancakes are filled with gourmet dark chocolate morsels and then topped with rich cream cheese glaze. It is absolutely heavenly!!!!

At Christmas time I found a Red Velvet Pancake mix at Cost Plus that allowed me to experiment with different toppings without being too time consuming. I found that I also like the red velvet pancakes with chocolate morsels and topped with REAL maple syrup instead of using the cream cheese glaze.

I finally found a recipe from scratch that does Red Velvet Pancakes justice.

Red Velvet Pancake Recipe

INGREDIENTS
1 c. all purpose flour
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
3 T. sugar
2 T. cocoa powder
1 large egg, lightly beaten
3/4 c. buttermilk
1/4 sour cream
3 T. unsalted butter, melted
1 T. red food coloring
1 t. vanilla extract
3 T. dark chocolate morsels

FOR CREAM CHEESE GLAZE:
4 oz. cream cheese, softened
1 c. powdered sugar, sifted
1 t. vanilla extract
1 T. milk

DIRECTIONS
Mix wet ingredients together then add dry ingredients.
Pour desired amount onto a hot skillet that has been sprayed with cooking spray or butter.
Sprinkle dark chocolate morsels over pancakes after batter has been placed in skillet.
Cook both sides of the pancake evenly.
Gently sift powdered sugar over the finished pancakes for garnish.
Top with cream cheese glaze and left over chocolate morsels.

Makes 8-10 pancakes
