Beef Stroganoff

Tonight I was reviewing my dinner making options. I had some ground beef that needed to be used and decided a nice beef stroganoff would do the trick. It makes a good amount of food and allows me to send leftovers with my husband to work.

Beef Stroganoff Recipe

1/2 (8 oz.) package egg noodles
1 small white onion, chopped
1 pound lean ground beef
1 (8 oz.) container of light sour cream
2 (6 oz.) cans of chopped mushrooms, drain liquid
1 can cream of mushroom soup
fresh or dried parsley, to taste
1 dash of cayenne pepper
3 dashes of cumin, or to taste
garlic powder, garlic salt & pepper, to taste
freshly grated Parmesan cheese (for topping), to taste

1. Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8-10 minutes or until al dente; drain.
2. In a skillet over medium heat, brown the onions until clear and ground beef until no pink shows; drain.
3. Add hamburger to the cooked noodles and stir in remaining ingredients.
4. Serve onto plates. Lightly sprinkle fresh Parmesan cheese over the top of the stroganoff and garnish with fresh chopped parsley.
