Soft and Chewy Chocolate Chip Cookies

I came across this recipe and knew I had to try it! At first glance it seems like an ordinary chocolate chip cookie recipe but this one has a unique ingredient. *cornstarch* This is the key to making the cookie soft, moist, and chewy. I even refrigerated the cookie dough for 24 hours and it stayed moist and wonderful!


Chocolate Chip Cookie Recipe


INGREDIENTS
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 t. vanilla extract
2 c. all purpose flour
2 t. cornstarch
1 t. baking soda
1/2 t. salt
1 c. bittersweet chocolate chips

DIRECTIONS
1. Preheat the oven to 350 degrees.

2. In a bowl, cream together butter and sugars until fluffy and light in color. Add eggs and vanilla and blend in.

3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.

4. Drop dough on baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. (The tops will not brown but do NOT cook longer than 10 minutes).

5. Let cool, on the sheet or wire rack for five minutes. Remove from baking sheet and let cool completely.

Try not to eat them all!
