8 Tips for Making the Best Cookies!

I want to let you in on a few secrets that will help you make the best cookies!

1. Chill the dough before baking... Chilling the dough helps softer dough keep their shape and makes the dough easier to work with. I find that chilling the dough improves the flavor and allows the dough to relax a bit.

2. Use less flour... Reduce your flour by about 1/4 cup to make the most tender cookies that do not dry out even after several days. (This is also why I recommend chilling your dough, in order to be able to handle the dough).


3. Soften your butter properly... Allow your butter to sit out for several hours to soften before making your cookies. You can also grate butter into a bowl, then it will soften in a few minutes. Do not microwave the butter to soften as this changed the basic structure of the cookies.

4. Line your cookie sheet with Parchment Paper to prevent your cookies from sticking or burning. (This will also allow easy clean up!)


5. Use the best quality ingredients as this will produce the tastiest cookies.

6. Use Cornstarch along with your flour to make your flour like cake flour. This results in a soft,, moist, chewy, and more delicate cookie. Use 1 part cornstarch to 5 parts flour. Example: If recipe calls for 2 cups of flour, use 1/4 cup corn starch.

7. Cream the butter and sugar together for 3-5 minutes. This will help the sugar to dissolve and whip the butter.

8. Sprinkle a dash of sea salt over your balls of cookie dough right before baking in the oven. The salt will help bring out the flavor of the cookies.
