Fettuccine Alfredo


Fettuccine Alfredo Recipe

INGREDIENTS
10 oz. Fettuccine noodles
1 cube butter, room temperature
2-3 cloves garlic, minced
1 c. heavy cream
1 egg yolk
2 c. freshly grated Parmesan cheese
2 T. parsley chopped, finely
white pepper to taste
cooked chicken (optional)

DIRECTIONS
Chop the parsley and grate the Parmesan cheese ahead of time and set aside.
Cook the Fettuccine noodles according to package directions.
Melt butter in a large skillet and add chopped garlic.
Cook on low for about 5 minutes, stirring often, make sure not to burn the garlic.
Pour about 1/4 cup heavy cream into a small bowl.
Add the egg yolk and beat together and set aside.
Pour the remaining cream into the frying pan.
Increase the heat to medium-high.
As the cream starts to boil, mix rapidly using a whisk.
Slowly add the cream/egg mixture.
You do not want the egg to cook.
Continue beating the cream mixture until all mixed together.
Add 1 cup Parmesan cheese and continue to mix the cream.
Pour in remaining Parmesan and parsley and mix until smooth.
Immediately remove from the stove.
Serve over cooked pasta.

Oven French Toast


Oven French Toast Recipe

INGREDIENTS
16 slices bread
8 eggs
1 c. milk
2 t. cinnamon
1 T. vanilla

DIRECTIONS
Heat oven to 350 degrees. Grease 2 cookie sheets. Blend eggs, milk, cinnamon, & vanilla. Dip in the bread slices one at a time, placing evenly on cookie sheets (sheet sizes and bread vary, some overlapping is OK). Pop into oven for about 10 minutes. Feeds 4 to 8 people depending on what you serve with it.

Jodee's Herb Bread



I got this recipe from my sister-in-law Jodee. It tastes amazing!

Herb Bread Recipe

BREAD INGREDIENTS
2 c. water
1 c. rolled oats
3 T. butter
3 3/4- 4 3/4 c. flour
1/4 c. sugar
2 t. salt
2 pkg. active dry yeast
1 egg

HERB BUTTER
1 T. grated parmesan cheese
1/2 t. dried basil leaves
1/4 t. dried oregano leaves
1/4 t. garlic powder
6 T. butter, melted

DIRECTIONS
Bring water to boil and stir in oats, 3 T. butter, let cool a little, add egg, 1 1/2 c. flour and remainder of ingredients. Blend and beat 3 minutes. Stir in 1 3/4- 2 1/2 c. flour to form stiff dough. Knead 3-4 minutes (may add 1/2 + flour). Let dough rest 15 minutes. Grease 9x13 pan and press dough into greased pan. Cut diagonal lines 1 1/2 inches apart, completely through the dough creating diamond pattern. Let rise til double. Heat oven to 375 degrees. Redefine cuts- poke knife to bottom of pan, but do not pull through dough. Spoon 4 T. butter over dough. Bake 15 minutes. Brush with 2 T. butter over bread. Sprinkle with Parmesan and herbs mixed together. Bake 10-15 minutes more minutes until golden brown.

Caramel Sauce


This caramel sauce can be used to dip apples, top a sundae, or even for caramel corn.

Caramel Sauce Recipe

INGREDIENTS
2 c. light brown sugar
1 c. light corn syrup
1 cube butter
1 can condensed milk
1 t. vanilla

DIRECTIONS
Boil brown sugar and corn syrup for 1 minute. Cool slightly and add butter. Stir well and add condensed milk and vanilla. Mix well and return to heat 3-5 minutes longer.

No Bake Chocolate Cookies


No Bake Chocolate Cookie Recipe

INGREDIENTS
2 c. sugar
1/2 c. cocoa
1/2 c. milk
1 stick butter
1 t. vanilla
1/2 c. peanut butter
3 c. oatmeal

DIRECTIONS
Combine first 4 ingredients and boil 2 minutes. Remove from heat and add remaining ingredients. Drop on wax paper or foil. Allow to cool.

Dirt


This recipe can be served in a flower pot to look like real dirt.
Just add a flower and gummy worms!

Dirt Recipe

INGREDIENTS
1 large package Oreos
1 large or 2 small packages of vanilla pudding
1 cool whip container
1 (6 oz.) package chocolate chips
1 pkg. Gummy worms (optional)

DIRECTIONS
Follow directions on pudding packages, then mix Cool Whip, chocolate chips and filling from Oreos. Layer crushed Oreos and pudding mix in a sand pail, starting with pudding and end with Oreos. Add gummy worms. Chill until ready to serve.

Mississippi Mud Bars



Mississippi Mud Bars Recipe

INGREDIENTS
2 cubes margarine
1/3 c. cocoa
2 c. sugar
3 eggs
1/2 t. salt
1 1/2 c. flour
1 1/2 t. baking powder
1 c. nuts
1 t. vanilla

DIRECTIONS
Mix ingredients. Pour into 9x13 pan. Bake at 350 degrees for 30 minutes. Spread with a jar of marshmallow cream. Cool in pan & then apply icing.

Chocolate Icing

1 cube butter, 1/3 c. cocoa, 5 T. milk, 1 t. vanilla, 1 lb. powdered sugar

Magic Brownies


Magic brownies have been a favorite Weight Watchers recipe for many health conscious brownie lovers. The "magic" ingredient is pureed black beans to add fiber and protein. There are so many variations of this recipe. I opted to go for a quick and easy version that can be made with only a few ingredients on hand.

Magic Brownies Recipe

1 (15 oz.) can of black beans, drained and rinsed
1 t. cinnamon
1 box brownie mix (my favorite is Betty Crocker Ultimate Fudge)
1 banana or 1/4 c. applesauce (optional to add moistness)

Preheat the oven to 350 degrees.
In a food processor, puree black beans with cinnamon, and banana or applesauce until smooth.
Transfer to mixing bowl, and combine with brownie mix. Stir by hand until shiny and mostly lump-free. Pour batter into a greased 8x8 baking pan. Bake for about 30 minutes.

Brownies will be rich, moist, and fudgy. Cool before cutting.
