Pasta Caprese

Today I made a Caprese Pasta for lunch. The recipe is very simple yet elegant.

It is light, fresh, and full of flavor.

Pasta Caprese

1/4 c. olive oil
1 small garlic clove, minced
2 t. lemon juice
1 1/2 pounds fresh tomatoes, diced
12 oz. fresh mozzarella cheese
1 lb. penne, bowtie, or angel hair pasta depending upon preference
1/2 c. fresh basil, chopped
salt & pepper, to taste

1. Combine all ingredients except cheese, pasta, and tomatoes in a food processor.
2. Cook pasta according to package directions.
3. Place fresh diced tomatoes in the bottom of large salad bowl.
4. Cover tomatoes with cooked pasta.
5. Top pasta with remaining ingredients.
6. Toss ingredients and serve immediately

** I like to grate fresh parmesan cheese over the top of the dish

NOTE: Freezing mozzarella cheese after slicing will prevent it from becoming too sticky
