Herbed Edamame Sauce with Soba Noodles

I have been wanting to try this recipe for a long time. I just did not think my picky husband would like the edamame and soba noodles. I knew the flavors would be amazing with all of the fresh basil, lime, cilantro and cashews. It is the perfect marriage of Asian and Italian flavors. It tastes like a fresh herb pesto meets Asian noodles.

I love the fresh ingredients, color, and flavor!

Herbed Edamame Sauce with Soba Noodles recipe

1 cup frozen shelled edamame (blanched)
1/4 cup dry roasted cashews
1/2 cup basil leaves
1 cup cilantro leaves
1/8 cup lime juice
1/4 cup olive oil
Pinch of salt
Dash of pepper
2-3 garlic cloves, minced
1/2 cup hot water
Hot cooked soba
Freshly grated Parmesan cheese

Prepare edamame according to package directions.
Place edamame, cashews, basil, and next 7 ingredients in a food processor and pulse it up until finely chopped.
Next, slowly pour hot water through the food chute and keep processing the mixture until smooth. Serve over soba and grate fresh Parmesan cheese over the top of the dish.
Garnish with extra cashews, cilantro, whole edamame, and lime wedges, if desired. Serve.

Note: read the labels when selecting soba noodles to ensure it is gluten free. Soba noodles are typically made with buckwheat (gluten free) but read the label to make sure there is no wheat added.
