Fresh Basil Pesto


I love the unique flavor of pesto. It tastes great on pasta, paninis, and pizza!

Fresh Basil Pesto
  • ¾ cups Extra Virgin Olive Oil
  • ¾ cups Grated Parmesan Cheese
  • ½ cups Pine Nuts or Walnuts
  • 3 whole Garlic Cloves
  • 4 cups Packed Basil Leaves
  • ½ teaspoons Salt
Using your food processor, blend the first 3 ingredients until combined and relatively smooth. Add and blend the remainder of ingredients until it reaches your desired consistency.
Serve over bowtie pasta or pasta of choice. Add an extra sprinkling of parmesan cheese if you like. Freeze portions or part of the batch in snack bags, or use immediately. Keeps well in the refrigerator for 5 days.

Fresh Guacamole



Last night I made Guacamole and it was to die for!!! It tasted so fresh and yummy. Joe loved it too!
It took less than 2 minutes to make.

Fresh Guacamole

3 Avocados
Pico de gallo
Lime juice
Salt

Directions:
Cut open avocados and take out pit. Scoop out avocados from peel with a spoon. Mash with a fork (leave it somewhat chunky). Mix the remaining ingredients to taste.

Pico de Gallo



I love love love pico de gallo! I go to Rancho Market weekly to get a pound of fresh pico for $1.58. We use pico on top of scrambled eggs, in burritos, and even on top of salads. I cannot get enough of it! I found this recipe and it makes great pico!

Pico de Gallo

INGREDIENTS

5 Roma tomatoes
3 jalapeno peppers
1/2 or 1 onion
cilantro
lime
salt, to taste

DIRECTIONS

Chop ingredients in food processor. Pour in a bowl, stir, and serve.

Puppy Chow


I have always loved Puppy Chow. I found a healthier version of this old favorite online but we all know it is still sinful, indulgent, and delish!

Puppy Chow Recipe
8-9 cups wheat chex
1/2 cup almond butter
1 cup dark chocolate chips
1 Tbsp butter 1 tsp vanilla
1 1/2 cups powdered sugar

1. Put cereal in large bowl.
2. Put chocolate, nut butter, and butter in bowl and heat in microwave until melted, stopping to stir every 10-15 seconds.
3. Once chocolate mixture is smooth, stir in vanilla.
4. Pour chocolate mixture over the cereal and toss until all of cereal is coated.
5. Put cereal in ziploc bag and add sugar.
6. Close bag and shake!
7. Store in refrigerator to cool.
